Quick & Easy Hot and Sour Soup
Ingredients
500g chicken or vegetable broth
1 medium onion
1 tsp ginger garlic paste
1 carrot, cut into thin slices
2 tbsp black soy sauce/ mushroom sauce
1 cup thinly sliced cabbage
2 tbsp chili paste/ hot sauce (adjust to taste)
½ tsp white pepper (or black pepper)
3-4 tbsp cornstarch mixed with 1 cup of water (for thickening)
3 eggs, beaten
Salt according to taste
1 tbsp oyster sauce
Directions
- In a pot, add half cup water and chicken, ginger garlic paste and onion fry it till the chicken changes color.
- Now add 2-litre water and the remaining half onion bring the broth to a boil.
- Cook for 30 minutes then remove onion from chicken broth and shred the chicken as well and remove bones. Add carrots and cabbage along with black mushrooms sauce, chili sauce, oyster sauc,e and pepper. Simmer for 5 minutes.
- Stir in the cornstarch slurry and let the soup thicken.
- Slowly drizzle in the beaten egg while stirring for a silky texture.
